I like to keep it simple.
British sugar and flour, Fairtrade 70% cocoa dark chocolate,
Somerset butter, free range eggs and organic vanilla extract. That's it.

I’ll be honest, I’ve tried making them with margarine, and half and half butter and margarine. They look the same, but they don’t taste right. I’ve tried using chocolate with a lower cocoa content – they’re not as rich, and they’re too sweet without the bitterness of the high cocoa chocolate; I’ve tried using cocoa powder to get that richness – it doesn’t work. Lastly, I’ve tried using vanilla essence instead of extract – bleeargh – well, maybe that’s a bit of an exaggeration, but they’re just not the same!
Like I said, keeping it simple works for me, and seems to keep the customers happy too!
